Boutique hotel Blendin Bloemendaal presents a new restaurant for curious food lovers. On Sunday, 21 September, Restaurant The Blonde officially opens its doors in Bloemendaal aan Zee. The restaurant is part of boutique hotel Blendin Bloemendaal.

Restaurant The Blonde brings people together, sparks curiosity for new and local flavors, and inspires with its unique location: perched on the dunes and surrounded by nature.


The culinary team

Culinary Manager – Menno Post

The restaurant is led by Culinary Manager Menno Post, SVH Master Chef and former owner of Michelin-starred restaurant Olivijn in Haarlem. Menno brings his technical precision and distinctive culinary signature to The Blonde.


Head Chef – Jurriaan Momberg

In the kitchen, Head Chef Jurriaan Momberg leads the way. After managing the Tropenmuseum’s restaurant for 17 years, he developed leading hospitality concepts as General Manager of Eye Filmmuseum and Head Chef of The Hoxton. With his social and unconventional approach, Jurriaan creates a welcoming, flavorful dining experience at The Blonde.

Together, they craft a restaurant experience where simplicity and depth go hand in hand. Every dish is recognizable yet carefully composed with local and Dutch ingredients.


The menu at The Blonde

The menu reflects its setting: in the Netherlands, on top of the dunes, overlooking the sea. From the hotel, you step straight into the stunning Kennemer Dunes nature reserve.

That landscape finds its way onto the plate: fresh North Sea oysters, burrata from Haarlem, and charcuterie made from local game. Expect kimchi from Bloemendaal-grown cabbage, lamb neck cured in seawater, dune rocket pesto, venison coppa, and pheasant sausage – all from the restaurant’s own backyard.


Blendin Bloemendaal

Restaurant The Blonde is part of Blendin Bloemendaal, the very first hotel of the new brand Blendin. Blendin creates places for curious travelers – places that invite you to explore new flavors, step into nature, and connect with the local environment.


An ode to Jac. P. Thijsse

The hotel is inspired by the work of Jac. P. Thijsse, founder of Natuurmonumenten and known for the famous Verkade albums on Dutch nature. His book Blonde Duinen not only gave the restaurant its name, but also inspired its menu. Throughout the hotel and restaurant, you’ll find subtle references to his work.

One example is the large artwork by Haarlem-based artists Darwin, Sinke & Van Tongeren at the entrance: a composition of taxidermy animals from the dunes, set in a thicket of deer antlers. It’s a tribute both to Thijsse and to the nature surrounding the hotel.
